Butternut Squash Bowls

ingredients

  • 1 lb (454 g) ground beef
  • 2 tbsp (28 g) olive oil
  • 1/2 cup (80 g) onion, chopped
  • 1/2 cup (57 g) red pepper, chopped
  • 2 cloves (6 g) garlic
  • 2 cups (280 g) butternut squash, cubed
  • 2 cups (176 g) brussels sprouts
  • Dash of salt and pepper
  • 1/2 tsp (1 g) Italian seasoning
  • 1/2 cup (120 g) beef bone broth

directions

  1. Heat oil in a pan on medium heat and add minced garlic. Cook until fragrant (about 3 minutes).
  2. Add onions, brussels sprouts and peppers and cook for 10 minutes.
  3. Add ground beef and seasonings to the mix and cook for 5 minutes to brown the ground beef.
  4. Add in butternut squash and beef bone broth. Cook for another 10-15 minutes until broth has evaporated.
  5. Enjoy warm!
