Ingredients
- 1 cup (200 g) raw lentils
- 3 garlic cloves, pressed
- 1 tsp (2 g) ginger, grated
- 1/2 tbsp (7 g) olive oil
- 2 tsp (4 g) curry powder
- 4 cups (960 g) vegetable broth, or water
- Salt to taste
- 1 cup (140 g) frozen peas and carrots, thawed
Directions
- Add vegetable broth, lentils, and a dash of salt to a pot and bring to a boil. Reduce heat to a simmer and cook for 15 minutes.
- Add garlic, olive oil, and curry powder and continue to simmer until lentil are soft (approximately 10 minutes).
- Add peas and carrots and cook until lentils are at desired consistency.
