Ingredients
1/2 tbsp (7 g) olive oil
1/2 small onion, chopped
1/2 red bell pepper, chopped
3 eggs, beaten
1/2 cup (130 g) canned black beans, drained and rinsed
2 tbsp (32 g) pico de gallo
Directions
In a medium skillet, warm olive oil over medium heat.
Add onion and bell pepper. Cook for 3-5 minutes until they are soft.
Add eggs. Cook while scraping and flipping them in the pan until the eggs are cooked through.
Add beans and pico de gallo and cook for an additional 1 minute.
Enjoy warm!
