Ingredients
- 1 tbsp (14 g) avocado oil
- 1/2 cup (35 g) mushrooms, sliced
- 1/4 cup (75 g) red onion, thinly sliced
- 1 clove garlic, minced or pressed
- Salt and pepper to taste
- 1 cup (21 g) baby spinach
- 3 large eggs, lightly beaten
- 1/2 small avocado
- 1/4 cup (42 g) strawberries, sliced
- 1/4 cup (39 g) cantaloupe, chopped
Directions
- Heat avocado oil in a medium skillet over medium heat. Add mushrooms, onion, garlic, salt and pepper. Cook for 4-5 minutes or until mushrooms and onion are browned.
- Add spinach just before removing from heat and mix all together. Transfer vegetable mixture to a plate.
- In the same skillet add eggs and cook until firm enough to flip. Flip eggs and top with cooked vegetables. Cooke for another minute then fold omelette to cover vegetables.
- Serve with a side of avocado and fruit.
