No-Bake Quinoa Crisps

Ingredients

  • ½ cup coconut oil, melted
  • ¼ cup maple syrup
  • ¼ cup raw cacao powder
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups puffed quinoa (or puffed brown rice cereal)

Directions

  1. In a medium mixing bowl, whisk together melted oil, maple syrup, cacao powder, and vanilla until smooth. Fold in puffed quinoa.
  2. Use an ice cream scoop to scoop 8 mounds onto a parchment-lined baking sheet. Press gently with your hands to flatten the tops out.
  3. Chill in the fridge for 1 hour to harden. Store in the fridge until ready to serve.
