Ingredients
- 5 oz (142 g) canned tuna, drained
- 1/2 cup (110 g) marinated artichoke hearts, chopped
- 1/2 tsp (1 g) black pepper
- 2 cups (40 g) arugula or rocket
- 6 cherry tomatoes, halved
- 8 kalamata olives, halved
- 1/4 cup (28 g) shredded carrots
- 1 tbsp (8 g) shelled sunflower seeds
- Juice of 1/2 lemon
Directions
- In a medium bowl mix together tuna, artichoke hearts, and black pepper.
- Add arugula, cherry tomatoes, olives, shredded carrots, and sunflower seeds.
- Drizzle with lemon juice and enjoy!
