Peppery Tuna Salad

Ingredients

  • 5 oz (142 g) canned tuna, drained
  • 1/2 cup (110 g) marinated artichoke hearts, chopped
  • 1/2 tsp (1 g) black pepper
  • 2 cups (40 g) arugula or rocket
  • 6 cherry tomatoes, halved
  • 8 kalamata olives, halved
  • 1/4 cup (28 g) shredded carrots
  • 1 tbsp (8 g) shelled sunflower seeds
  • Juice of 1/2 lemon

Directions

  1. In a medium bowl mix together tuna, artichoke hearts, and black pepper.
  2. Add arugula, cherry tomatoes, olives, shredded carrots, and sunflower seeds.
  3. Drizzle with lemon juice and enjoy!
