Pesto Smoked Salmon Toast

Ingredients

  • 1 medium slice sourdough bread
  • 1 tbsp (14 g) pesto (dairy free)
  • 1/2 avocado, sliced
  • 3 oz (85 g) smoked salmon
  • 1/2 cup (10 g) arugula

Directions

  1. Warm sourdough bread in the oven or toaster. Slice in half and spread with pesto sauce.
  2. Top with sliced avocado, smoked salmon, and arugula.
