Ingredients
- 12 oz (340 g) chicken thighs
- 1 1/5 cup (366 g) sliced carrot
- 2 cups (266 g) sliced sweet potato
- 1/2 cup (58 g) sliced sweet onion
- 1 1/2 tbsp (21 g) olive oil
- 1/2 tbsp (3.5 g) paprika
- 1/2 tbsp (4 g) garlic powder
- 1 tbsp (0.5 g) fresh dill
- Salt and pepper to taste
Directions
- Preheat the oven to 400°F (176°C).
- On a large baking tray, place chicken, carrots, sweet potatoes, and onions.
- Drizzle the olive oil, paprika, garlic powder, dill, salt and pepper over the chicken and vegetables. Toss to combine.
- Bake in the oven for 25-35 minutes or until the chicken reaches an internal temperature of 165°F (73°C). and the vegetables are soft.
- Serve hot and enjoy!
