Ingredients
- 12 oz (336g) shredded chicken breast
- 1 cup (225g) cottage cheese
- 1/2 cup (56g) fresh mozzarella
- 2 1/2 cups (75g) baby spinach
- 1 cup (220g) artichoke hearts
- 1 tsp (3g) garlic powder
- 1/2 tsp (1g) onion powder
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup sliced carrots and celery (or vegetables of choice)
Directions
- Add cottage cheese and mozzarella to a blender and blend until smooth
- Add oil to pan and cook on medium heat. Add spinach and artichokes and cook for 5 minutes until spinach is wilted.
- Add seasoning, cottage cheese, and mozzarella to the pan and cook for 5 minutes.
- Mix in shredded chicken to warm and serve with carrots and celery
